Im trying to see a list of all the communities on say, Lemmy.ml in the voyager app… how can I see this? Are other apps recommended?

If you go to search, and then explore you can see a full list, automatically sorted by moest popular.

No problem! Welcome to the app and Lemmy. For ally our other questions I am afraid I dont have a proper answer as I tend to lurk more instead of creating coomunities. There are some shoutout communities for new communities I believe.
